Full Description

White Peony, or Bai Mu Dan, is one of the most traditional styles of Chinese white tea. Grown and crafted in Fuding, Fujian - the birthplace of white tea - it is made from one young bud and two tender leaves, which are picked early in the season when the plants are at their most delicate.

The result is a tea that embodies balance: soft sweetness, floral top notes, and a light, toasty depth. Unlike many other teas, Bai Mu Dan undergoes minimal processing. The leaves are simply withered and dried, allowing their natural character to develop without manipulation. This gentle approach produces an amber-gold liquor with a smooth mouthfeel and virtually no bitterness.

White Peony is ideal for those who appreciate subtlety and nuance in their cup. It captures the calm, refreshing essence of white tea while offering a little more body and flavour than the rarer, bud-only styles.

Origin

This tea comes from Fuding in Fujian Province, the original and most respected origin for Chinese white tea. The region’s mineral-rich soils, mountainous landscape and mild coastal climate create the perfect conditions for cultivating the Da Bai varietal - the tea plant from which both Bai Mu Dan and Silver Needle are made.

Fuding’s long history of white tea production is reflected in its craftsmanship. Local farmers have refined the art of withering and drying for centuries, producing teas that express the delicate, clean flavours unique to this terroir. Bai Mu Dan from Fuding is prized for its freshness, clarity, and gentle complexity, making it the benchmark for this style of white tea.

Processing

The making of White Peony is a study in restraint. Fresh leaves and buds are handpicked and laid out to wither naturally in the sun or under carefully controlled indoor conditions. This extended withering period allows moisture to evaporate slowly, concentrating the tea’s natural sweetness and floral aroma.

Once the leaves reach the right level of pliancy and fragrance, they are lightly dried to preserve their structure and character. The minimal oxidation that occurs during this process gives Bai Mu Dan its signature combination of freshness and warmth - brighter and more aromatic than most black teas, yet fuller and more rounded than Silver Needle.

This careful, low-intervention approach results in a tea that’s both simple and sophisticated, a perfect expression of Fuding’s white tea tradition.
