Simon Matthew is the man behind Herbivore. He’s a chef and long-time vegetarian, known to many from his time at Milgi and the Embassy Cafe. He takes inspiration from around the world, and his own backyard to create flavourful food. Dishes make use of Wales’ finest produce and are in tune with the seasons.
The Herbivore’s first ventures are a series of occasional feasts at some of Cardiff’s best independent venues. These monthly events offer unique and delicious menus, communal dining and a convivial atmosphere.
